Ingredients to make Peruvian Baked Chicken:

 1 chicken

 1 tablespoon of aji panca or hot pepper

 1 orange

 1 lemon

 1 pinch of salt

 1 pinch of pepper

 25 cubic centimetres of soy sauce

 2 tablespoons olive oil

 1 kilogram of Andean potato or papines

 1 tablespoon vinegar

 1 teaspoon ground ginger

 1 teaspoon of sugar

How to make Peruvian Baked Chicken:

Combine the spices, citrus juices, ginger, vinegar, hot pepper, sugar, and soy sauce.

With the Peruvian baked chicken dressing, paint all the chicken pieces and let them marinate in the fridge if possible overnight. If it is not possible, leave them at least 3 hours.

Once macerated, preheat the oven to 180 ºC. Put the chicken in the oven. Paint the chicken with the maceration liquids every 15 minutes while it bakes. In this way, you will achieve crispy skin and a very juicy chicken inside.

Wash the unpeeled potatoes well. In a pot with salt, bring the water to a boil and add the potatoes.

Tip: To prevent the potato skin from breaking, prick the skin with a toothpick or fork while boiling.

Cook for 20 minutes, strain, cut in half and in a pan with olive oil and butter, sauté the potatoes until golden brown. Serve and enjoy your Peruvian baked chicken!
